You can’t deny a delicious southern Banana pudding! This dish is also easy to make ahead of time and assemble with a few extras right before serving.
(serves 6)
INGREDIENTS
1/4 (60 ml) cup white sugar
1/4 (60 ml) cup brown sugar
2 Tbsp. (30 ml) cornstarch
1 egg, beaten
3/4 cup (180 ml) evaporated milk
3/4 cup (180 ml) whole milk
1 tsp. (5 ml) vanilla extract
1 tsp. (5 ml) banana extract
1 package vanilla wafers
2 bananas, sliced
DIRECTIONS
- Mix together sugar, cornstarch, egg, evaporated milk and whole milk in saucepan over medium heat.
- Stir until thick: about 5–7 minutes.
- Remove from heat, add vanilla and banana extract. Mix well.
- Pour into bowl and refrigerate, covered, until chilled.
- Serve by layering cookies, banana slices and pudding mixture.
- Top with remaining bananas or cookies. Serve immediately.
TIPS AND TRICKS
- Use 2 tsp. vanilla if you have no banana extract.
- Top with mint garnish, cinnamon and/or whipped cream for extra points on presentation.
