Banana Pudding

You can’t deny a deli­cious south­ern Banana pud­ding! This dish is also easy to make ahead of time and assem­ble with a few extras right before serving.

(serves 6)

INGREDIENTS

1/4 (60 ml) cup white sugar

1/4 (60 ml) cup brown sugar

2 Tbsp. (30 ml) cornstarch

1 egg, beaten

3/4 cup (180 ml) evap­o­rated milk

3/4 cup (180 ml) whole milk

1 tsp. (5 ml) vanilla extract

1 tsp. (5 ml) banana extract

1 pack­age vanilla wafers

2 bananas, sliced

DIRECTIONS

  1. Mix together sugar, corn­starch, egg, evap­o­rated milk and whole milk in saucepan over medium heat.
  2. Stir until thick: about 5–7 minutes.
  3. Remove from heat, add vanilla and banana extract. Mix well.
  4. Pour into bowl and refrig­er­ate, cov­ered, until chilled.
  5. Serve by lay­er­ing cook­ies, banana slices and pud­ding mixture.
  6. Top with remain­ing bananas or cook­ies. Serve immediately.

TIPS AND TRICKS

  • Use 2 tsp. vanilla if you have no banana extract.
  • Top with mint gar­nish, cin­na­mon and/or whipped cream for extra points on presentation.
